Black rice is a healthy alternative to white

Who doesn’t like rice? I haven’t met such people yet)) So my eldest son is ready to eat rice three times a day! However, I try to replace white rice with black, or wild. In China, it was also called forbidden: only she had the right to eat this rice, for the common people it was forbidden.

There are a lot of varieties of rice grains! Most of us are accustomed to traditional white rice. And if other varieties of this cereal – brown, brown, basmati – are even remotely known to us, then black or wild rice most often causes surprise and genuine interest, since it is not so often found in local stores.

Black rice is cultivated in the US state of Minnesota – this is the world’s largest exporter of this product. Growing and harvesting this annual plant is labor intensive.

Grains of cultivated black rice may have chocolate brown or charcoal black (the shade depends on the maturity and processing of the grains), and they are thin and oblong in shape.

Black rice is cooked much longer than the usual white – from 40 minutes to an hour, during which time it acquires a purple hue. Most often it is used as a side dish or filling, added to soup, snacks, salads, desserts.

Wild rice differs from white in composition with an exotic sweetish flavor, light nutty aroma and, most importantly, in composition, I want to tell about its useful properties.

Some black rice cooking tips

Firstly, before boiling wild rice, it is advisable to soak the night in cool water. In the morning, drain the water, pour the rice into boiling water (1: 3 ratio), bring to a boil and boil over low heat for at least 45-60 minutes. Ready rice will increase three to four times. After that, reduce the heat and let it stand for about 15 minutes without stirring.

Secondly, after boiling black rice, the white pan may stain. Consider this fact when choosing dishes.

Thirdly, wild rice goes well with sesame seeds, tamari (soy sauce), nuts and legumes, and serves as an ideal side dish for vegetables, meat, fish or the basis for snacks and salad.
