How do scientists justify fats and is it worth it to lean on
WE LIVE AT THE TIME when our ideas about the world and what is good and what is bad are corrected daily. Issues of health and proper nutrition are not only not an exception, but, on the contrary, are more often questioned than others. What is at stake is well understood by those who once every day during the year ate tuna (“not at all fatty, 22% protein, vitamins A, B1, B2, B6, B9, E, PP; calcium, magnesium, sodium, potassium , iodine, iron, zinc … ”) in order to choke on a fish sandwich one day, reading a study that tuna, like other perennial inhabitants of the ocean, accumulates mercury in its tissues, therefore it is recommended to eat it no more than a couple of times a month.
Nevertheless, a healthy lifestyle over the past decades has formed an official list of “constant enemies”, where tobacco, alcohol, sugar and saturated fats are among the most dangerous (except for adherents of strict methods of losing weight, claims to natural unsaturated fats, others recognized the benefits of olive oil and nuts). If the therapist recommended that we eat fat cottage cheese, and the yoga instructor advised adding ghee ghee to cereals, we noted that these were only exceptions to the general rule. And when, along with notes on how to replace cream filling in profiteroles with skim milk cream, they justified “bad cholesterol”, we maybe stopped feeling guilty about another omelet, but for ourselves we could justify the eggs – nothing not butter. News of another study proving that “a diet rich in fats reduces the risk of cardiovascular disease” continued to be equated with the spread of extremist statements against the established order of years. Indeed, over the past years, people who were not even interested in the issue have been informed that fat is cholesterol, cholesterol is “plaque”, plaque is “heart disease”, and heart disease, according to the WHO, is the most common cause of death on earth.
All last year, both popular sites and specialized medical resources wrote about the end of the “war against fat.” However, the voices of bacon defenders reached the general public only last week. Their mouthpiece was the cover story of the authoritative TIME publication with an unambiguous takeaway, “Eat Oil. Scientists declared fat an enemy. Why did they make a mistake. ” The material explains how all these decades, natural fatty foods were replaced by industrial analogues with many harmful components: if the oil was originally made only from cream, then the composition of any margarine takes several lines on the package. Due to the established “harmfulness” of animal fats, they were replaced year after year with artificial trans fats or other industrial additives, which in practice turned out to be much worse than the original components. Initially, it was assumed that thanks to criticism of the fat people will stop eating pork ribs and switch to carrot sticks. The romantic food theory crashed into mountains of cookies and chocolate, which “lacked” the lack of taste sensations. Today, TIME admit that they do not expect any immediate changes in the attitude to the fats of the medical community. The reason is in the lobby of the pharmaceutical community, which is interested in selling drugs that lower blood cholesterol. They are immediately declared the main legalized drugs of our time.
Through the efforts of active Keyes, the theory that
fats are the main cause of excess weight and problems
with health, has become an axiom
There is a certain irony in this “exposure” of TIME, since it was they who placed on the cover of Encel Keys, the same doctor, in 1961, whose erroneous conclusions sent fats into exile for half a century. The reason for this was a study conducted after World War II and showed that deaths from heart attacks are more common in countries with high fat intake. However, Kees’s critics assured that he simply picked up regions that fit his theory, since there are many states (among them Germany, Sweden, Holland) where this connection is not traced. As evidence of the harmlessness of fats, it is also appropriate to cite one of the worst and most long-lived nationalities – the French: their recipes are easily recognized among all the others, since everything starts as one with the words “take a pound of butter”.
Through the efforts of active Keyes, the theory that fats are the main cause of excess weight and health problems has become an axiom. After the publication of the book “Diet Revolution” in 1972 and accusations of quackery, Dr. Atkins, for his recommendations to those who wanted to lose weight, had to eat fatty meat, cheese and bacon without limits, to justify themselves in the American Congress. Of course, the Atkins diet has something to criticize for today, but this is primarily due to the consumption of excess protein.
